Twice-Baked Cheddar Potato Casserole

Twice-baked cheddar potato casserole is a rich, comforting dish that mixes the fluffy texture of baked potatoes with creamy cheese, butter, and seasonings, all baked again into a golden, effervescent casserole. It’s ideal as a side dish for gatherings, holidays, or a comfortable family meal.

Ingredients

1.5 kg (approximately 6–7 medium) potatoes, russet or starchy range

2 tablespoons butter

1 cup sour cream (or thick yogurt as an opportunity)

1 cup complete milk (regulate for creaminess)

1 ½ cups shredded cheddar cheese (sharp cheddar offers the best flavor).

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper to flavor

three–4 inexperienced onions, finely chopped (elective)

½ cup cooked and crumbled bacon (non-obligatory, pass for vegetarian model)

Extra cheese for topping

Instructions

1. Bake the potatoes.

Preheat your oven to 200°C (400°F). Wash and dry the potatoes, then prick them with a fork. Place them immediately on the oven rack or a baking tray. Bake for approximately 45–60 minutes, or until they may have a soft interior when pierced with a knife.

2. Scoop and put together

Let the potatoes cool slightly so they may be smooth to touch. Cut them in half and scoop out the smooth insides into a huge blending bowl, leaving a skinny shell in case you plan to use potato skins later for texture or presentation.

Add butter to the new potato flesh so it melts fast. Then blend in sour cream, milk, garlic powder, onion powder, salt, and black pepper. Mash till creamy; however, nonetheless, slightly chunky for texture.
