Harissa Lamb-Stuffed Courgettes

 

This dish is a delicious Mediterranean-stimulated meal presenting courgettes (zucchini) packed with spiced lamb, flavored with harissa, herbs, and aromatic vegetables. It’s ideal for a dinner that’s hearty but clean.

Ingredients (Serves 2–4)

Courgettes:

2 medium courgettes

1–2 tbsp olive oil

Salt and pepper

Lamb Filling:

250–three hundred g floor lamb

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1–2 tsp harissa paste (modify to flavor)

1 small tomato, finely diced

2 tbsp clean parsley, chopped

1 tbsp sparkling mint, chopped (optional)

Salt and pepper

2–3 tbsp breadcrumbs or cooked rice (elective, for binding)

To Serve:

Greek yogurt or labneh

Lemon wedges

Instructions

1. Preheat the oven: Preheat to a hundred ninety°C (375°F).

2. Prepare the courgettes:

Slice courgettes lengthwise and scoop out the center to shape hollow shells.

 Chop the eliminated flesh and set aside.

Drizzle the shells with olive oil, season with salt and pepper, and area in a baking dish.

3. Cook the filling:

Heat olive oil in a pan over medium warmth.

Sauté onions till smooth, then add garlic, cumin, paprika, and harissa. Cook 1–2 mins until fragrant.

 Cook till browned.

Stir in chopped courgette flesh and diced tomato; prepare dinner three–5 minutes until softened.

Remove from warmth and blend in parsley, mint, and breadcrumbs or rice if the use of. Adjust seasoning.

4. Stuff the courgettes:

Spoon the lamb mixture into the courgette shells, pressing gently to fill evenly.

5. Bake:

Cover with foil and bake for 20 mins.

Remove foil and bake for every other 10–15 mins till the courgettes are soft and the tops gently browned.

6. Serve:

Serve heat, topped with a dollop of Greek yogurt or labneh and a squeeze of lemon.

Tips and Variations

For greater flavor, sprinkle some feta cheese on top earlier than the final 10 mins of baking.

You can use quinoa or couscous as opposed to breadcrumbs for a healthier opportunity.

Adjust harissa to taste; start with 1 tsp and growth if you want greater warmness.

These courgettes pair properly with a sparkling salad, roasted vegetables, or fluffy couscous.

This recipe balances the spiciness of harissa with the richness of lamb and the freshness of herbs, making it an excellent but easy dish. The courgettes act as a natural, healthy vessel for the flavorful filling, growing a meal that’s both comforting and light.
