Spicy Slaw Bowls with
Shrimp & Edamame
This vibrant bowl is sparkling, crunchy, and full of
protein. With zesty, spicy dressing and tender shrimp, it’s best for a fast
lunch or dinner. The mixture of colourful veggies, edamame, and highly
spiced-sweet dressing makes it both gratifying and mild.
Ingredients (Serves
2–three)
For the Slaw:
2 cups shredded purple cabbage
1 cup shredded carrot
1/2 red bell pepper, thinly sliced
1/2 cup cooked edamame (shelled)
2 green onions, sliced
1/4 cup fresh cilantro (elective)
For the Shrimp:
10–12 medium shrimp, peeled and deveined
1 tsp olive oil
half tsp smoked paprika
1/4 tsp chili powder or cayenne
Salt and pepper, to flavor
For the Spicy
Dressing:
2 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp honey or maple syrup
half tsp sriracha (or greater to flavor)
1 clove garlic, minced
1 tsp grated ginger (non-compulsory)
Optional Toppings: sesame seeds, overwhelmed peanuts, lime
wedges
Instructions
1. Prepare the
Shrimp:
Heat a skillet over medium-high warmth. Cook shrimp 2–3 mins
in line with facet till pink and opaque. Remove from warmth and set aside.
2. Make the Slaw:
In a massive bowl, combine shredded cabbage, carrot, pink
bell pepper, edamame, green onions, and cilantro if the use of. Mix nicely.
3. Prepare the
Dressing:
In a small bowl, whisk collectively soy sauce, rice vinegar,
sesame oil, honey, sriracha, garlic, and ginger. Adjust sriracha to your
preferred stage of warmth.
4. Assemble the
Bowls:
Toss the slaw with 1/2 of the dressing to coat frivolously.
Divide the slaw into serving bowls. Arrange shrimp on top.
Drizzle with final dressing.
Add non-obligatory toppings along with sesame seeds,
