Chicken Fajita Cobb
Salad
The Chicken Fajita Cobb is a colourful and flavorful twist
at the traditional Cobb salad, combining the fresh crunch of veggies with the
smoky, spicy flavors of Tex-Mex fowl fajitas. This salad is ideal for a hearty
lunch or dinner and balances protein,
vegetables, and healthy fat, multi function colorful bowl.
Ingredients
For the Chicken:
2 boneless, skinless chook breasts, sliced into strips
1 tsp chili powder
1 tsp paprika
half tsp cumin
half tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to flavor
1 tbsp olive oil
For the Veggies:
1 purple bell pepper, thinly sliced
1 inexperienced bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium onion, thinly sliced
1 tbsp olive oil
Salad Base:
four cups romaine lettuce or mixed veggies
1 cup cherry tomatoes, halved
1 avocado, diced
half cup black beans or corn (optional)
2 tough-boiled eggs, sliced
1/2 cup shredded cheddar or Mexican combo cheese
Tortilla strips or beaten tortilla chips for crunch
Ranch, chipotle-lime, or cilantro-lime French dressing
Instructions
1. Prepare the
Chicken:
Mix chili powder, paprika, cumin, garlic powder, onion
powder, salt, and pepper in a small bowl.
Toss the chook strips within the spice blend until calmly
lined.
Heat 1 tablespoon of olive oil in a skillet over medium-high
heat.
Cook the chicken for four–6 mins, until fully cooked and
slightly charred. Remove and set apart.
2. Sauté the Veggies:
In the same skillet, add a tablespoon of olive oil.
Sauté the sliced bell peppers and onion for four–5 mins till
smooth but still barely crisp.
3. Assemble the
Salad:
Place the lettuce or mixed vegetables in a huge serving bowl
or on a plate.
Arrange the chicken, sautéed peppers and onions, tomatoes,
avocado, black beans, and eggs in rows over the veggies, like a conventional
Cobb salad.
Sprinkle shredded cheese on top.
Add tortilla strips or crushed tortilla chips for texture
and crunch.
4. Serve:
Drizzle your preference of dressing over the salad just
earlier than serving.
Toss gently if desired, or go away it organized for a

Tips and Variations
For a spicier kick, add a dash of cayenne pepper to the
chook seasoning.
Use leftover grilled chicken or rotisserie fowl for a faster
