Ingredients
12 oz. Pasta (penne, rigatoni, or
spaghetti works well)
1 tablespoon olive oil
12 ounces Italian sausage (moderate
or spicy), casing eliminated
three cloves of garlic, minced
1 small onion, finely chopped
three cups of fresh spinach
1 cup heavy cream or half-and-half
½ cup grated Parmesan cheese
½ teaspoon crimson pepper flakes
(optional)
Salt and black pepper to flavor
½ teaspoon dried Italian seasoning
Fresh parsley or basil for garnish
(optional)
Instructions
1. Cook the pasta.
Bring a large pot of salted water to
a boil and cook the dinner pasta in line with the bundle commands until al
dente. Reserve approximately ½ cup of the pasta cooking water, then drain the
pasta and set it aside.
2. Cook the sausage.
Heat the olive oil in a huge skillet
over medium heat. Add the sausage and damage it apart with a spoon.
3. Add aromatics.
Stir in the chopped onion and
prepare dinner for about 3 mins until softened. Add the minced garlic and
prepare dinner for any other 30 seconds until it is aromatic.
4. Prepare the sauce.
Pour in the heavy cream and stir
well. Add Italian seasoning, pink pepper flakes (if used), and a pinch of salt
and black pepper. Let the sauce simmer lightly for about three–four minutes so
it thickens slightly.
5. Add spinach.
Stir inside the fresh spinach and
cook for 1–2 minutes till it wilts into the sauce.
6. Combine pasta and sauce.
Add the cooked pasta to the skillet

Sprinkle in the grated Parmesan
cheese and blend nicely until it melts into the sauce, developing a creamy
texture.
8. Serve
Garnish with chopped parsley or
basil and additional Parmesan cheese before serving.
Tips for the Best Pasta
Use clean spinach: It wilts speedily
and provides color and nutrition to the dish.
Choose precise sausage: Italian
sausage with herbs and spices gives the sauce rich flavor.
Don’t overcook the pasta: Keeping it
al dente enables it to preserve itself when mixed with the sauce.
Add veggies: Mushrooms, cherry
tomatoes, or roasted bell peppers can decorate the dish.
Variations
Lighter model: Substitute
half-and-1/2 or milk for heavy cream.
Tomato twist: Add 1 cup crushed
tomatoes for a tomato-cream sauce.
Vegetarian choice: Replace sausage
with sautéed mushrooms or plant-based tofu sausage.
