Sweet Potato and
Peanut Soup
This creamy, nutty soup combines the herbal sweetness of
candy potatoes with the rich, savory flavor of peanuts. It’s vegetarian,
comforting, and full of vitamins, making it ideal for a comfortable lunch or
dinner.
Ingredients (Serves
four–6)
2 medium candy potatoes, peeled and reduce into cubes
1 medium onion, chopped
2 cloves garlic, minced

1–2 tablespoons peanut butter (smooth or crunchy)
1 can (400 ml) coconut milk
4 cups (1 liter) vegetable broth
1–2 teaspoons floor cumin
1 teaspoon smoked paprika (optional)
Salt and pepper to flavor
1–2 tablespoons vegetable or peanut oil
Juice of 1 lime (elective, for brightness)
Chopped roasted peanuts and sparkling cilantro, for garnish
Instructions
1. Prepare the
aromatics:
Heat the oil in a large pot over medium warmth. Add the
chopped onion, garlic, and ginger. Sauté for three–5 minutes until the onions
end up gentle and fragrant.
2. Add spices:
Stir in cumin and smoked paprika, cooking for approximately
a minute to launch their flavors.
3. Cook the sweet
potatoes:
Add the cubed candy potatoes to the pot, stirring to coat
with the spices. Pour in the vegetable broth and convey it to a boil. Reduce
the heat and simmer for 15–20 mins until the sweet potatoes are soft.
4. Blend the soup:
Remove the pot from warmth. Use an immersion blender to
puree the soup until clean. If using a ordinary blender, work in batches and be
careful with the recent liquid.
Stir within the peanut butter and coconut milk. Return the
pot to low warmness, warming gently. Taste and alter with salt, pepper, and
lime juice if favored.
6. Serve and garnish:
Ladle the soup into bowls and garnish with chopped roasted
peanuts and fresh cilantro for delivered texture and taste.
Tips & Variations
Spice: Add a small chopped chili or ½ teaspoon cayenne for a
