Muffin-Tin Omelets
with Feta & Peppers
These mini omelets are best for breakfast, brunch, or meal
prep. They’re colourful, packed with vegetables, and the feta provides a
creamy, tangy flavor. Using a muffin tin makes them component-managed, easy to
serve, and handy for storing inside the refrigerator or freezer.
Ingredients (6 mini
omelets)
6 massive eggs
1/four cup milk (dairy or plant-based totally)
Salt and pepper to flavor
half of cup diced bell peppers (purple, yellow, green)
1/4 cup diced onions (optional)
1/3 cup crumbled feta cheese
1–2 tbsp chopped clean herbs (parsley, chives, or basil)

Instructions
1. Preheat Oven: Set oven to 350°F (a hundred seventy

2. Prepare Muffin Tin: Grease 6 cups of a muffin tin gently

4. Add Veggies: Evenly divide the diced bell peppers and
onions among the muffin cups.
5. Add Cheese and Herbs: Sprinkle feta cheese and chopped
herbs over the greens in every cup.
6. Pour Egg Mixture: Carefully pour the egg mixture into
every muffin cup, filling every about 3-quarters complete.
7. Bake: Place inside the oven for 18–22 minutes. The
omelets are completed whilst the eggs are set and lightly golden on top.
8. Cool and Serve: Let the mini omelets rest for a couple of
minutes. Gently loosen with a spatula and serve warm.
9. Storage: Store in an hermetic container within the fridge
for as much as four days. Reheat within the microwave for 30–60 seconds. They
additionally freeze properly; thaw before reheating.
Tips & Variations
Cheese Swap: Try goat cheese, shredded cheddar, or
mozzarella as opposed to feta.
