Chicken Tamale Casserole (Easy, Comforting Bake)
Chicken Tamale Casserole is a
relaxed, own-family-style dish inspired by conventional tamales but plenty
faster and easier to prepare. Instead of wrapping filling in corn husks, the
entirety is layered right into a baking dish and baked into a soft, savory,
barely sweet casserole with bold flavors of fowl, corn, and spices.
Ingredients (Serves 4–6)
2 cups cooked chook (shredded;
rotisserie chicken works nicely)
1 cup corn kernels (sparkling,
frozen, or canned and drained)

Instructions
1. Prepare the base filling.
Heat a pan over medium warmth and
upload a little oil. Sauté the onion until gentle, then add garlic and cook for
any other minute. Stir inside the shredded fowl, corn, chili powder, cumin,
salt, and pepper. Pour in the salsa or enchilada sauce and blend everything
properly. Let it simmer for 3–5 mins so the flavors combine together.
2. Make the corn topping layer.
In a bowl, whisk collectively
cornmeal, baking powder, milk (or water), and oil. The mixture needs to be like
a thick pancake batter. This will form the gentle “tamale-fashion” layer on the
pinnacle.
3. Assemble the casserole.
Preheat your oven to 180°C (350°F).
Lightly grease a baking dish. Spread the fowl combination calmly at the bottom.
Sprinkle half of the shredded cheese over it. Then lightly pour the cornmeal
mixture on the pinnacle, spreading it evenly so it covers the filling.
Four. Bake
Place the dish inside the oven and
bake for about 30–40 minutes, or till the top is firm and barely golden. In the
final five minutes, sprinkle the ultimate cheese on top and permit it to melt.
